Cutting the Japanese Way. TWIN Cermax –Probably the World’s Sharpest Japanese Knife.
The finest sushi and sashimi, wafer-thin radish, finely sliced ginger – the Japanese cuisine turns cutting into a form of art. No wonder that Japanese chefs are jealously guard their knives like a treasure. Now is the chance to experience the real joy of working with a Japanese chef’s knife: ZWILLING J.A. HENCKELS has made TWIN Cermax, probably the world’s sharpest Japanese knife. TWIN Cermax cuts wafer-thin slices with precision. It doesn’t matter whether fish, meat or vegetables, TWIN Cermax glides through all ingredients sheer effortlessly and without destroying the cell structure. Whatever needs cutting does not only look neat but the taste is also being preserved for much longer. ZWILLING J.A. HENCKELS has scored a spectacular success with TWIN Cermax: the knife has unique sharpness and cutting properties. This has been made possible not only by the typical blade geometry of a Japanese knife but also by the sheer unbelievable blade hardness of 66 Rockwell. Thus, TWIN Cermax cuts three to four times sharper than other top quality knives. A special triple-layered blade structure (CLAD material) – a corrosion-resistant stainless steel on the outside and the core made of the ultra-tough MultiCarbide powder steel – guarantees long-lasting sharpness. This way TWIN Cermax not only has an exceptionally hard blade but one that is in any respect well armed for the tough demands in the kitchen. ZWILLING J.A. HENCKELS uses Micarta as TWIN Select’s handle material, a high-tech material made of linen and synthetic resin. It also passes any endurance test but at the same time is very comfortable to hold. Micarta’s distinguishing features are the unconditional form stability and the elegant wood-like image. The outstanding ergonomics and perfect balance allow for long-lasting and tireless work.

The TWIN Cermax range comprises four types of knives: the classic utility knife with 130 mm blade, the slicing knife (160 mm), the Santoku knife (180 mm) and the chef’s knife (200 mm). Each knife comes individually boxed
