knife. TWIN Cermax cuts wafer-thin slices with precision. It doesn’t matter

sheer effortlessly and without destroying the cell structure. Whatever needs
cutting does not only look neat but the taste is also being preserved for
much longer. ZWILLING J.A. HENCKELS has scored a spectacular success with
TWIN Cermax: the knife has unique sharpness and cutting properties. This has
been made possible not only by the typical blade geometry of a Japanese
knife but also by the sheer unbelievable blade hardness of 66 Rockwell.
Thus, TWIN Cermax cuts three to four times sharper than other top quality
knives. A special triple-layered blade structure (CLAD material) – a
corrosion-resistant stainless steel on the outside and the core made of the
ultra-tough MultiCarbide powder steel – guarantees long-lasting sharpness.
This way TWIN Cermax not only has an exceptionally hard blade but one that
is in any respect well armed for the tough demands in the kitchen. ZWILLING

The TWIN Cermax range
comprises four types of knives: the classic utility knife with 130 mm
blade, the slicing knife (160 mm), the Santoku knife (180 mm) and the

TWIN Cermax M66: Hand honed for razor sharp cutting edge. The new extreme
in sharpness that will amaze even the most ambitious cook. It is
razor-sharp, holds the edge longer and is perfectly balanced. The outer
part of the blade is made of High corrosion resistant steel. .The blade
core is made of our special MC 66 (MicroCarbide) powder steel that is not
only very hard, but also tough, making the blade exceptionally sharp with
a very long cutting-edge retention.
Sharpening: TWIN Cermax M66 has a much longer cutting-edge
retention, but will need to be resharpened. To sharpen please use a
sharpening stone such as TWIN Stone Pro., or a Henckels Diamond Steel..
Follow the instructions of the stone/steel for proper handling.

PLEASE NOTE; TWIN CERMAX M66 KNIVES ARE NOT DISHWASHER SAFE.
Cutting edge is very sharp. Please handle with care.
To avoid damage to the blade, do not cut hard or frozen food. ,Use a knife
specifically designed for such food.
Never use a knife for purposes other than what it is intended for.
For safety always wash knives separately, in warm water with detergent.
Dry separately, keeping the sharp cutting edge away from the hand, wiping
from the back to the cutting edge. Properly store knife after drying..
