The santoku knife is a general use chef's knife with its origins in Japan. It has an  unshouldered blade, which is typically between five and eight inches long, has a flat edge and a dull back which curves down near the point to a tip angle of around 60 degrees. The top of a santoku knife's handle is in line with the top of the blade, giving the user's fingers plenty of room underneath the handle. The word santoku means "three good things" - a reference to the three cutting tasks it is designed for: slicing, dicing and mincing. Some santoku knives have a "hollow" blade which helps keep cut food from sticking to the blade. This "hollow" blade is obtained by grinding shallow impressions along the blade sides.

The santoku is a good compromise between a cleaver and a chef's knife. The flat edge is excellent for slicing and mincing, very good for dicing, and works fairly well for light chopping. It is quickly becoming a standard multipurpose knife in America.
